Add `assume-yes` to config

## Problem description

I'm not sure if that's just the "standard" way that other cloud provider CLIs also follow.
But I don't always want to be prompted to accept every action, additionally I also don't want to always include `--assume-yes` or `-y` to my commands.

## Proposed solution

Add `assume-yes` to the config to allow globally setting it.
