3.14 update

Problem

At some point this needs to be updated to 3.14. To make sure the xpdfsuite stuff continues to build, let's be careful how we roll that out, so that we know that there are versions that will build across the python versions that xpdfsuite supports.

Proposed solution

Maybe increase to 3.14 but don't remove 3.11? Then make an issue to remove 3.11 when xpdfsuite updates?

This is a good idea that we could bump the version to 3.14 while keep the 3.11 python as some of the dependencies in the xpdfsuite still does not support 3.14 (I think it is myavi)

I think it's safe to bump the versions. Just checked 3.14 abis and it seemed none is involved in this package. I'll draft the pr now.
